Pineapple curry

I used ready at hand ingredients. So, its ready in literally 10-15 minutes.

Ingredients
1 can diced pineapple
Oil
Mustard seeds
pinch of Asafoetida
curry leaves
salt
1 can coconut milk
1/2 teaspoon tamarind extract
1-2 teaspoons red pepper flakes
jaggery for taste
salt

Preparation:
Heat oil
Add mustard seeds, asafoetida
Add pepper flakes
Add pineapple and jaggery
Add half the coconut milk
Cook for about 5-7 minutes on low to medium heat being careful to not let the coconut milk curdle.
Add rest of the coconut milk and heat through
Add salt to taste

Pita pizza - Indian style

I wanted to use some whole wheat pitas. So, I thought I could make individual pizzas and give it an Indian twist. We were very pleased with the results. Not perfect measurements, but, here goes .

Makes 3 individual pizzas

Ingredients

3 wholewheat pitas
1/2 - 1 cup pizza sauce (depends on how much sauce you like on your pizza. Also, I use Trader Joes pizza sauce)
1 clove garlic
1/2 teaspoon grated ginger
1/2 cup chopped pineapple
1/2 cup julienned green bell peppers
1/2 cup sliced mushrooms
1/2 cup sliced red onions
1/2 teaspoon red pepper flakes or red chilli powder
1/2 teaspoon kitchen king masala
1/4 teaspoon coriander powder
1/4 teaspoon cumin powder
1 teaspoon yogurt
1-2 cups grated cheese ( I wanted to use up a packet of Mexican blend, so I used tat)
salt to taste

Method
1. Preheat oven to 350
2. Heat the pitas in the oven for about 3-5 mins - I did this so that the pitas get a little tough on the surface and the pizza doesnt come out soggy
3. Mix everything other than the pizza sauce and cheese
4. Take out the pitas and spread the pizza sauce
5. Sprinkle a layer of cheese
6. Spread around the vegetable mixture
7. Put the pitas back into the oven for 7-10 minutes
8. Take out, slice and serve

** I think that the spice combination will work very well with chicken and paneer. Want to give that a try some time soon too.
